Easy Taco Bowls (gluten free)

Looking for a easy meal? This is our go-to when we want something quick, or for using up leftovers, or if we are on the road. Modify the ingredients in millions of ways, the options are as endless as your imagination! This gluten free version of our taco bowls is guaranteed to satisfy!

 1 tbsp Oil
 24 Mushrooms
 1015 Cherry Tomatoes
 1 Small onion
 2 Small/Medium Red and/or Yellow Peppers
 1 lb Beef, Pork, or Beans
 1 Package Taco seasoning
 4 cups Cooked rice
 4 tbsp Burrito Sauce
 24 tbsp Sour Cream or Plain Yogourt

Place par boiled rice in a pot and prepare according to package directions, or use the prepared rice cooked ahead of time.

Cut veggies in slices approximately 1cm thick and get your pan very hot. Put in your oil, and when the oil is hot, add your veggies. Flash fry for approximately 5-7 minutes. Once edges are browned and tomatoes have begun to split open, remove from heat and set aside. You want your peppers to be tender crisp.

Prepare meat (or meat substitute) by cooking or heating in a pan and add your taco seasoning.

Place rice in bottom of serving bowls, then add meat and veggies. Top liberally with Burrito Sauce and Sour Cream or Plain Yogourt. Salt and pepper to taste. Optionally garnish with shredded cheese, cilantro, guacamole, your choice of hot sauce. Serves 2-4.
